  • 2 cups Flour
  • ½ cup Sultan brand Olive Oil
  • ½ cup orange juice
  • 1 ½ tsp baking powder
  • 1 egg yolk
  • Pinch of salt
  • 2 tbsp Ziyad brand Sesame Seeds (optional)

For the Filling

  • 2 cups Ziyad brand Uslu Black Olives, chopped
  • 2 cups Ziyad brand Cracked Green Olives, pitted & chopped
  • ½ tsp Ziyad brand Ground Cumin
  • ⅛ tsp Ziyad brand Oregano


  • 2 tbsp cilantro
  • 2 tbsp red pepper paste
  • 2 tbsp jalapeño pepper


Step 1

Combine flour and baking powder in a mixer. Add olive oil and mix until crumbly. Add orange juice slowly until the dough takes shape. Compress dough and let it rest for 30 minutes.

Step 2

In a separate bowl, add olives, cumin, and oregano. Include optional ingredients if desired. Heat oven to 350°.

Step 3

Separate the dough in half. Roll into a 10” square on greased or floured work surface. Spread half of the olive mixture in thin layer over the dough. Roll up slowly. Repeat with remaining dough and olive mixture.

Step 4

Place both rolls on baking sheet. Brush top with egg yolk and sprinkle with sesame seeds.

Step 5

Bake 30-40 minutes, or until golden brown and crisp. Remove and let cool so slicing is easier.
